Spiralized Baked Potatoes

Making food fun is both enjoyable visually and also makes food preparation for the home cook more interesting.

We just love our spiralizer but have to admit that it has had periods of time where it sat in the back of the cupboard. That being said, when it makes it way to the countertop, we use it all the time and it becomes the star in our kitchen. Grandmother's Kitchen Tips for Spiralized Baked Potatoes

1. If you have a spiralizer sitting in the back of your cupboard take it out and start having fun preparing food with it.

2. You can use any variety of potato you like and either leave the skin on or peel it off.

3. Plan on one to two potatoes per person as you would when preparing potatoes any other method.


Ingredients

Potatoes - 1 or 2 per person, depending on size (We used red potatoes)

Olive Oil - 1 or more Tablespoons, enough to lightly coat all the potatoes

salt- enough to lightly salt the potatoes before baking

Directions

1. Preheat the oven to 425 degrees F.

2. Line one or two baking sheets with either a silplat or aluminum foil.

3. Wash and dry the potatoes. Put through the spiralizer. Spread out onto the prepared pan in single layer.

4. Lightly salt the potatoes then place into the preheated oven to bake for 20 minutes.

5. Check the progress and watch for over-browning. Continue baking stirring and removing any fries that are very brown every 5 minutes until all the fries are crispy.

6. Baking time will depend on your oven and how many spiral potatoes you have on the pan.

Most common is the zucchini which has become popular as a 'pasta' substitute for those looking to cut down on carbs but still enjoy a good pasta sauce with something that has the visual appeal of pasta.

In the vegetable family, zucchini and all summer squash as well as butternut squash, rutabaga parsnips and carrots.

Some of the salad choices are bell peppers, cabbage, carrots, celeriac, radish, onions and cucumber.

There are many recipe books dedicated to spiralized veggies and fruits.

The popularity of this method of food preparation is mainly attributed to the fact that most vegetables tend to be high in nutrition and lower in calories, sugars and fats.

As more and more people make the shift to eating raw foods and steamed vegetables, the home chef can get excited with the options available with the spiralizer.
