Grandmother's Tips for Whipped Pineapple Cream Topping:

1. One of the most important things you want to do when making real whipped cream is to start with chilled heavy cream. Cold heavy cream whips up beautifully.

2. You also want to be sure and chill the mixing bowl and the whisk or beaters for at least 15 minutes before you begin whipping the cream as this too will help ensure recipe success. A chilled metal bowl works the best, along with the whisk, standing mixer, or electric beaters.

3. Heavy cream whips up to at least two to three times of its original volume, so one cup of heavy cream will yield about two to three cups of real whipped cream, and it tends to splatter quite a bit while being whipped, which is why you want to have a bowl that is large enough.

4. When making real whipped cream you want to start mixing the cold heavy cream slowly. After mixing about two minutes, you can add in the sugar once the heavy cream starts to thicken up a bit.

Makes: 2 cups topping

2 cups heavy whipping cream

1/4 confectioners’ sugar (sifted)

1 teaspoon pure vanilla extract

1 can (398ml) crushed pineapple , we used Dole packed in its own juices

1 cup vanilla pudding, - we used our Homemade Vanilla Pudding Recipe

Directions

1. To make the stabilized whipped cream. (Homemade Whipped Cream Recipe)

2. Put a glass or stainless steel bowl along with the beaters from your mixer into the freezer for about 30 minutes.

3. Pour the whipping cream into the chilled bowl.

4. Use the chilled beaters and mix for 2 minutes.

5. Mix in the sifted confections’ sugar. If you don’t have a special flour sifter you can use a regular sieve and a large flat spoon and work the confectioners' sugar though the sieve. You want to get all the lumps out.

6. Add the vanilla and mix in.

7. Keep mixing until the whipped cream forms stiff peaks. It will take a few minutes. Once they are stiff stop or you run the risk of over whipping and making too stiff.

8. Fold in the crushed pineapple.

9. Fold in the vanilla pudding.

It is also super delicious as a light whipped dessert on its own.
