Chocolate Chip Oatmeal Cookies

Ingredients

Makes 4 dozen

1/2 cup dried cranberries

1 cup butter,at room temperature

3/4 cup brown sugar

3/4 cup granulated sugar

3 eggs

1 cup chocolate chips 70% cacao

2 1/2 cups small rolled oat flakes

2 cups all purpose flour

2 teaspoons baking soda

2 teaspoon baking powder

Directions

1. Preheat oven to 375 degrees F.

2. Line a baking sheet with parchment paper.

3. Boil some water and pour over the 1/2 cup cranberries to soften them while you proceed with the cookie. Let sit about 10 minutes then drain off the water, do not squeeze. Set aside to cool to room temperature.

4. In a large mixing bowl beat together the butter, brown sugar and granulated sugar until well combined.

5. Beat in the eggs. Stir in the softened cranberries.

6. In another bowl, stir together the oat flakes, flour, baking soda and baking powder.

7. Add the dry ingredients to the wet, beating in a little at a time until everything is well combined.

8. Spoon the cookies onto the cookie sheet leaving an inch between the cookies. Place into the preheated oven and bake 13-15 minutes until done.

9. Remove the cookies from the oven and let sit on the baking sheet for a few minutes to set a little, then transfer to a cooling rack.

10. Repeat until all the cookies are baked. The recipe makes 4 dozen so you will need to do in batches.
