Hummus

Ingredients

Serves: Makes 4 cups

1 garlic clove, smashed and cut into small pieces

1 (734ml) can Garbanzo beans also known as Chickpeas (4 cups)

1/4 cup water

2 Tablespoons pure lemon juice

1/4 cup plain yogurt or keifer

1 heaping Tablespoon peanut butter

1/2 teaspoon salt

1 Tablespoon olive or grapeseed oil

Directions

1. Open the can of garbanzo beans (chickpeas) and use a strainer to pour out the liquid from the garbanzo beans into the sink. Rinse with cold water to wash off the chickpeas and transfer to a large 4 cup measuring cup or mixing bowl.

2. Peel, smash and cut the garlic clove.

4. Use a hand immersion blender to mash up the chickpeas and work until the mixture is creamy smooth.

5. Add the water, lemon juice yogurt, peanut butter, garlic, salt and oil and continue to mix together until well combined. Use right away or cover and place into the refrigerator in a container with a sealed lid.

6. This hummus will last for a few days if kept refrigerated.

7. Serve with crackers, carrots, cucumbers, bite sized tomatoes for a few ideas.
