No Bake Peanut Butter Oatmeal Cookies

In Grandmother's Kitchen we have been brought up with the motto: "Everything in moderation, even moderation", which to me when it comes to desserts has always meant to enjoy certain high sugar foods in small amounts, but every so often enjoy some guilt free indulgence as well.

No bake dessert recipes are a gift from the heavens in the summer when you are looking for something sweet but don't want to heat up the house by turning on the oven. They are also a great dessert to make when you have a full oven of baking meals and want to use the stove top for your dessert creation.

5. You can use either smooth peanut butter or chunky peanut butter, it's up to you, but only use quick cooking oats when you're making no bake treats as they will soften up easier when combined with the other ingredients.

6. The homemade cookies also look great topped with pecan halves.


Ingredients

Makes: 24 cookies

1 1/2 cups granulated sugar

1/2 cup butter

1/2 cup whole milk

1 teaspoon pure vanilla extract

3/4 cup crunchy or creamy peanut butter

2 cups quick-cooking oats, uncooked

24 pecan halves, optional but we use and find it just makes the cookies so much better!

Directions

1. Line a cookie sheet with parchment paper.

2. Combine the sugar, butter and milk in a large saucepan on the stove.

3. Bring to a hard boil and boil for one minute stirring so nothing sticks or burns.

4. Remove from the heat and stir in the peanut butter and vanilla until the mixture is very smooth and well combined.

5. Fold in the oats and while it is still warm drop by spoonfuls. Work quickly as it hardens as it cools.

6. Garnish with a pecan half on each while cookies are warm.

7. Texture of these cookies is crumbly.

8. Place into the refrigerator to harden then move into a container with a lid and keep in the refrigerator.

9. Place a row of parchment paper between each row of cookies.
