Easy Rice and Vegetable Soup

I love when my Mother gets it in her mind to whip up a pot of soup. Each pot is different and each pot is delicious. This simple pot of soup recipe is quick and easy to throw together and will give you meals for a few days. I find after a couple of days eating soup I get a little bit bored of the same meal day after day, and so I love to freeze a few portions of soup for those days that I would rather not cook but want something quick and healthy.Healthy soups are a good way to jam pack nutrients into your day, and this one has lots of delicious and nutritious ingredients that will leave you feeling comfy and warm. Grandmother's Tips for Easy Rice and Vegetable Soup:

1. When you are making these quick soups, sometimes you don't have all the ingredients on hand. We wanted to end up with 6 cups of broth and only had one 946ml pack which is why we used a chicken bullion cube for a portion of the soup. Be flexible, you can use tetra packs or bullion cubes, to equal the 6 cups.

2. Kids generally like this homemade soup as it has mild flavors and simple ingredients.

3. You can store the soup in the refrigerator and heat us small portions as needed.

4. Soup will keep for several days in the refrigerator and is such an easy soup to warm up for a quick lunch.

5. Use old jars with lids to store your soups in. Smaller jars like those from salsa are a perfect one serving size.


Ingredients

Serves: 4-6

1 Tablespoon butter

1 small onion, chopped

1-2 celery ribs, sliced thin

6 cups vegetable or chicken broth, We used Pacific brand ( 1+1/2 - 946ml boxes)

2 carrots, chopped into pieces

3 small potatoes, peeled and cubed

2 cups pre-cooked rice

1/2 cup frozen peas

2 Tablespoons tomato paste, we used Mutti brand, and Italian paste that comes in a tube

salt and pepper to taste

Directions

1. In a large soup pot melt the butter on medium temperature. Add the onion and celery and cook 5 minutes until soft. Stir as it is sautéing to keep from burning.

2. Add the broth.

3. Add the chopped potatoes and carrots and cook 10-15 minutes until they are soft. Do a poke test with a knife or fork to see if done.

4. Add a teaspoon salt and stir in.

5. Add the pre-cooked rice and peas.

6. Stir gently with a wooden spoon to break up the precooked rice.

7. Stir in the tomato paste. This not only flavors but also gives the soup a very appealing color.

8. Do a taste test, adding salt and pepper if needed.

9. Bring to a boil and cook for 5 minutes. Shut off and serve.

10. This is a very easy quick soup to make and a great way to use up left-over rice.
