Grandmother's Kitchen Tips for Homemade Gravy:

1. If your gravy is too thick, you can add more liquid (broth). Note, if you do this you will have to turn the heat back on and continue to whisk over high heat while you whisk.

2. If you get lumps (which often you will), just pour the gravy through a fine sieve and work it through with a spatula. You may need to sieve it several times for overall smoothness.

3. Hand immersion blenders work well to make sauces smooth.

Ingredients

Makes - 4 cups gravy

1/4 cup butter

1 teaspoon salt

1/4 cup flour

4 cups chicken broth (or your preferred kind of broth)

When I was a child I would literally drown my mashed potatoes in gravy. It was just so darn good! No turkey meal is really complete without gravy. We even considered not making it (I think we were tired), and realized that there is just no way to make a turkey meal without gravy.

We debated in the kitchen when making this recipe whether or not to add the Kitchen Bouquet because honestly it is VERY rare to find colors and artificial ingredients in any Grandmother's Kitchen recipes. The argument went as follows

The thing about so many classic food items is that eating is a FULL sensory experience. The color of the food is often just as important in our minds as the smell and taste. Ever wonder why there are colorings at all? Sensory evaluation labs will tell you, for example, that beet and spinach coloring simply don't make as visually appealing candies a chemical dyes do.

So, it is possible with homemade beef gravy to brown the beef so well that the gravy is dark and appealing in that way that people hope for. I personally do not really notice the difference, it tastes delicious either way, but traditional cooks will often use browning sauces like Kitchen Bouquet to make a brown gravy recipe. Kitchen Bouquet also adds flavor. This type of sauce has been around since the 1800's and different brands exist. This particular brand has: Caramel Colour (Sulphites), water, vegetable base (water, carrots, celery, cabbage, parsley, turnips, parsnips), salt, sodium benzoate, spices, mustard and flour.

Some replacement ideas for the Kitchen Bouquet, which we plan to try next time are a dark soy sauce, Better Than Bouillon Beef Base paste, or you can simply enjoy a nice light gravy as a totally natural option.
